Rolling in Thyme & Dough is a Dripping Springs treasure: Think tiny Belgian bakery with a big Texas heart.

Owner Fabienne Bollom was born in Belgium and grew up in a family that loved food and were in the food business.  The family gatherings were always around a big table with “big food”.

“We were always surrounded with good, healthy, luscious, fresh food and  loved making new discoveries with food.”

Fabienne found her passion for cooking with her family and developed her expertise by taking many cooking classes and working with many European chefs.

Fabienne moved to the US to marry and brought with her all the recipes and books she had collected.  She states she never stopped to translate a recipe but enjoyed blending the European recipes with the American way of cooking.  She thoroughly enjoys trying new combinations of flavors and textures and continues to make new discoveries by combining the two continental cuisines.

Rolling in Thyme & Dough’s delicious dessert bites have been featured at previous Dripping with Taste Wine & Food festivals.

Fabienne worked for 10 years in retail sales while her children were young,.  In the evenings, she would cook for her family and friends.  This eventually led to a small catering business out of her home.  In her catering business she was a specialist in tartes, tortes and quiches.  She says that her discovery of this type of cooking was the beginning of a lasting relationship with food.

Of Fabienne’s latest creation – Rolling in Thyme & Dough in Dripping Springs – Way Out West (WOW) Austin reports: Dining here is like starring in a real-life “Fried Green Tomatoes.” This cozy place is a vintage Southern cottage, in the midst of a small nursery selling herbs, vegetables and native plants. You can savor the farm-fresh ingredients inside, then pick up your own after lunch! Thyme & Dough was started five years ago by a Belgian chef named Fabienne. She envisioned a bakery-cafe serving her own fresh-baked breads and desserts, and making breakfast and lunch with the freshest local ingredients. The menu for Fabienne’s DWT2012 demonstration includes:

Pork Tenderloin with Texas Pure Luck Goat Cheese and Reduction Red Wine Sauce, Caramelized Onions.  Fabienne is also considering preparing her Pear with Red Wine Sauce for dessert. It was a huge hit at last year’s Dripping with Taste festival.
